True GRITS

gritsI’M A CHEF AND I’M SERIOUS ABOUT MY GRITS

Grits is a food made by boiling ground Corn, and usually served with other flavorings as a breakfast dish, usually savory. It is popular in the Southern United States. Grits is of Native American origin, and is similar to other thick corn-based porridges from around the world such as polenta. YES..I L-O-V-E Grits….I have been eating them since I was knee high to a grasshopper….My Grandmother Annie Mae who is southern as southern can be made THEE most amazing grits…AH-MAZE-ZING. She didn’t buy the grits that takes 5 minutes, the quick grits. She purchased the ones that takes 30-40 minutes to cook. I used to watch them and ask “Are they done yet? Are they done yet?” Until I got banned from the kitchen. I then stood outside the kitchen asking “Are they done yet”…LOL (memories), Although my Grandma is no longer alive my love for grits continues on. No Grandma I didn’t follow your tradition of slow cooked grits. I’m still impatient and choose the quick grits that take 5 minutes. Every time I see the slow cook grits I think of you and smile…….

All my grits must contain cheese. ITS MANDATORY…LOL. This baby is Cheese Grits, Fried Egg, Grilled Chicken Breast topped with Fried Apples. This comforts me on so many levels……..
