Breakfast is THE BEST MEAL of The Day


For ME Breakfast the THE most important meal of the day. No matter what time I awake on any given day I WANT BREAKFAST. Most times I go to bed praying and wondering what am I going to eat for breakfast. I try to plan meals. Things don’t ALWAYS go as planned. I cook 3 or 4 hays a week. I have yet to learn to cook for 1 so I have leftovers. Leftovers are AWESOME. Anywho…. Instead of eating a traditional breakfast all the time I try to incorporate new meals into my menu. I try to take a break from my GRITS every so often.

Waste No Want Not….The dreaded ENDS of the bread. Ok…I made a vow to myself to stop wasting food. So I took these to ends along with eggs and turkey bacon(not shown) and made Turkey Bacon & Egg Toast Cups

All I used was 2 pieces of bacon cut. 2 of the end bread and 2 eggs. I sprinkled salt, pepper and a bit of nutmeg and brushed the edges of the bread with melted butter. As this was baking I fixed myself a cup of Roobios Chai Tea and waited……..


I had some leftover avocado from dinner.. VOILA’………WASTE NOT WANT NOT………

Peach Cobbler with Homemade Vanilla Bean Ice Cream

Our family is from the south as I have stated many, many times. Peach Cobbler is one of our desserts that we ABSOLUTELY LOVE….I loved being in the kitchen with my Grandmother & Mother pretending to LEARN. Acting like I was eager to report for kitchen duties. It was the FATTIE in me that was the motivation to be in the kitchen sneaking tastes. Not to mention both my Mom & Grandma would let me taste. It was those tastes that I took that were the BEST.

My grandmother & Mama used to make theirs with designs and I try to follow suit. People eat with their eyes. If their anything like me if it looks gross then I DO NOT want to try it. I don’t care how many rave reviews it gets. I TRULY DO EAT WITH MY EYES.

For the holidays my Mama would put alcohol in a SPECIAL pan for the adults in the family. As a kid I couldn’t wait to grow up to a taste of THAT special batch of Peach Cobbler. Now that I have the family recipe and access to the many alcoholic options I try to use different ones I come across.

The smell from this cobbler brought back memories of my childhood and my Mama who is no longer here. Food can evoke feelings of nostalgia. Some make me smile. Some make cry and some make me HUNGRY

When this is brewing on the stovetop the smells are AWESOME. When it goes into the oven the smell intensifies. The smells. The memories.

Oven Fried Chicken

I LOVE Food. Especially CHICKEN. I try to find different ways to cook it. I LOVE it FRIED. My most favorite way to have it. I ran across Oven Fried Chicken recipes. I looked over many recipes. I saw the process and decided to go ahead and create it. I seasoned my chicken as I always do. Most of the recipes said to season the flour mixture or the coating. I prefer to have the chicken itself seasoned. Everyone can do it they way they deem suitable for them


So I sorted out my ingredients above……Preparing to coat my chicken to go into the oven

So I coarsely chopped the pretzels. Then I remembered I saw a recipe that called for CORN FLAKES…Since I had some I decided to try some chicken with pretzels and some with corn flakes. No I didn’t combine them both.

I took a baking sheet lined it with aluminum foil and sprayed generously with canola oil cooking spray. I mean GENEROUSLY

So I combined the egg & buttermilk. I dipped each piece into the egg buttermilk mixture then the flour, back to buttermilk egg and then coated with pretzels. I did the same procedure for the cornflakes.

It was only befitting that I made Mac & Cheese and my FAMOUS Collard & Kale Greens.

BBQ Chicken


Growing up in a southern family BBQ was a huge part of our diet. I watched my Mama whip up some great BBQ in my early years. I remember my siblings & I having sauce all over our faces. LOL. It wasn’t until I started cooking that I learned to appreciate the time, energy & passion that went into preparation.


As I prepared this my Mama & Brother was on my mind. My brother took over making Mama’s BBQ sauce. My Brother can cook his ASS off. He learned from Mama. Over the holidays last year we all cooked a dish. My Brother went APE in the kitchen. Ribs & Salmon were his dishes. Although I don’t eat pork, from the on everyone’s face as they ate told me he MURDERED THE RIBS..


Here’s how we make our BBQ Sauce

1/2 cup chopped sweet onion

2 garlic cloves, minced

1 jalapeño pepper, seeded and minced

1 tablespoon olive oil

1 (32-oz.) bottle ketchup (such as Heinz)

1 cup firmly packed dark brown sugar

1 cup apple cider vinegar

1/2 cup molasses

1 tablespoon Worcestershire sauce

1 teaspoon kosher salt

1 teaspoon freshly ground black pepper

1/2 teaspoon dried crushed red pepper


Sauté onion, minced garlic, and jalapeño pepper in hot olive oil in a large saucepan over medium-high heat 4 to 5 minutes or until tender. Stir in ketchup, dark brown sugar, vinegar, molasses , Worcestershire sauce, kosher salt, freshly ground black pepper, and dried crushed red pepper. Bring to a boil, stirring occasionally. Reduce heat to low; simmer, stirring occasionally, 30 minutes. Use immediately, or refrigerate in an airtight container up to 1 month

MLK Cookie Favor Gift Box

I ABSOLUTELY LOVE WHAT I DO. The things you can create with food & dessert are ENDLESS. You can evoke feelings of deep satisfaction to nostalgia. I remember when I was younger and I got to watch the MLK I Have A Dream Speech on television on some Black History Month special. Although he had died before I was born I can still remember him talking about  EQUALITY & LOVE. The way he spoke and the passion in his voice was memorable. I created these cookie favors in his honor.

As a NATURALISTA I decided to create these cookies of sisters rocking natural hair styles. I have 100’s of cutter and each cutter can be used in more than 1 way. I actually can customize cookies. That may be 1 of my super powers. LOL.

So I went a step further and created these natural cookies with sisters rocking loc’s. This has gotten so many rave reviews. It just confirms that I am in the arena I am supposed to be in. When I am creating these I am in a ZONE. Time flies by and I realize that I haven’t eaten but not even hunger pains can stop my creative juices from flowing. If you’re anything like me then you are always in the kitchen COOKING UP SOMETHING. Here is MY list of SOME of the MUST HAVES in the kitchen. I cant imagine how I’ve been functioning without them.

1. Splatter Guard(silicone shown here)

I have 3 deep fryers. 1 for fish. 1 for chicken and 1 for Turkey’s and large batch items. When I am doing something small and don’t want to drag out my deep fryer I break out my frying pan and splatter guard. They come in silicone and a metal mesh version. This prevents the splashes on your walls and back splash.

2. Chopper

This mini chopper is great for chipping for small batch cooking. Who wants to drag out the processer? Not me. I have a great small one. Fast and easy to operate.

3. Immersion Blender

THIS is so handy. Once upon a time THIS was very costly. Now they are very affordable. This is great for blending homemade soups. You don’t have to worry about transferring hot soups to a blender. You can use this in the pot you cooked the soup in. You can blend mashed potatoes, guacamole, salsa and other sauces.

4. Garlic Press

There’s NOTHING like fresh garlic. A garlic press is a great gadget to have around. It’s fast and easy to use.


Graters are GREAT to zest lemons and oranges. Its great for cheeses and other soft foods like eggs, carrots, beets or zucchini. You can also grate garlic with this as well

6. Juicer

This is GREAT and much needed kitchen item. I refuse to use lemon juice in the bottle. Fresh lemon juice makes for a GREAT tasting dish. This works for lime juice as well as orange.

I remember seeing her in
Do the Right Thing
and thinking how much she looks like my grandmother and her name is Ruby as well.


Right? Awwww,Look at My Rubes, Miss u Lady!! 😥 Anywho….

Especially her character in the movie was so much like “My Rubes” her calling Da Mayor played by her husband Ossie Davis “you old drunk fool”. LOL!!



I also remember watching her in the 1961 original movie “A Raisin in the Sun” she was so beautiful.



Born in Cleveland, OH and raised Harlem, NY in 1922 Ruby Dee was an actress, poet, playwright, screenwriter, journalist and activist.



Her acting career crossed all major forms of media over a span of 8 decades.
She was nominated for numerous awards: In 1995 Ruby Dee and Ossie Davis (her husband) were awarded with the National Medal of Arts & in 2004 recipients of the Kennedy…
