Pastelón & A Fork

Pastelón is a sweet-and-salty Caribbean dish of sweet plantains, meat, cheese, and sauce. The meat varies by location but traditionally pastelón is made with ground meat. Since I don’t eat red meat I used ground Turkey.

I sauteed onion, garlic, red & orange peppers in advocado oil rhen added the ground turkey that I seasoned with Sazón and other seasonings. 

I beat 2 eggs and layered the bottom of the pan with half of egg mixture, then fried plantains, added meat, mozzarella cheese, meat then more mozzarella and topped with more plantains and remainder of egg mixture.

I LOVE Sweet Plantains so this was one of those must try recipes for me. 

Holy SHEET Pan

I L-O-V-E trying new recipes…LOVE. I love food. Not sure why I didn’t pursue being a chef earlier. Growing up there weren’t many Black Chef’s. My Mom & Grandmother certainly inspired me. They were AMAZING cooks & knew their way around the kitchen. They used what was available to them and it didn’t consist of a lot of fresh ingredients. As I began delving into food I found more & more fresh ingredients and incorporated them into my foods. Anywho….I ran across this recipe for Sheet Pan Nachos. What better food is there to eat on a chilly Friday? 

THIS RECIPE by Damn Delicious used ground beef. I don’t eat red meat so I found a more befitting  substitute SHRIMP…..

Easy Peasy recipe. Very flavorful, filling  & fantabulous. 

Avocado Bravado 

              Shrimp Stuffed Avocado 

The other night I wanted stuffed avocado but the recipe I had was for Garlic Shrimp in an Avocado and my pallette didn’t want that. I thought about what I had in my fridge and what I wanted to eat. I gathered my shrimp that I purchased from a Element Seafood. They sell sustainable raised seafood so you get a better tasting product. 

To really highlight the flavor of the shrimp I decided to create THIS….

I sautéed shrimp in a dab of Avocado Oil

I love this oil. I sometimes use this in place of Olive Oil and I purchased it from BJ’s Wholesale. I don’t always use precise measurements. 

I squeeze fresh lemon on my shrimp to enhance the taste of the shrimp. 

 I sautéed seasoned shrimp. DO NOT OVERCOOK THEM. It will ruin the taste 

I sliced & scoopes out the avocado and placed it in a bowl

I added the following 

  • Diced Tomatoes 
  • Chopped Cilantro
  • Salt
  • Pepper
  • Lime Juice
  • Purple Onion

Add as much of each ingredient as you like. There is no way to mess up this recipe. 

Asparagus…The Smelly Truth

So I L-O-V-E Asparagus. Roasted is THEE BEST. So I purchased A BUNCH. I used some for a Shrimp Asparagus White Cheese Pizza as in my previous post.

I wrapped some in pastry and brushed with Olive Oil & Rosemary and baked. Then I  came across this video on the Internet……

Not to be graphic but I’ve experienced this. My urine really smelled. Asparagus tastes so great I will endure this for the taste but not as often as I like to.

There you have it…THE SMELLY TRUTH

 

Shrimp & Asparagus White Cheese Pizza

I ran across this recipe for Asparagus White  Cheese Pizza http://warmvanillasugar.com/2015/08/19/asparagus-white-pizza/

I changed it a little. It had a dough recipe but opted for store bought. I roasted the Asparagus a little. I tossed it with olive oil, salt & pepper. Roasted for 7 minutes.

I brought some Creme Fraiche and added minced garlic and set it aside to deal with the store bought dough.

I shaped the dough into a square and brushed it with olive oil & basil. I spread the mixture on the dough, added parmesan cheese, mozzarella & topped with the Asparagus

I let it cook longer than I should have but it was so DELISH…I added the shrimp

Shrimp Taco Bowls

I am a SOFT TACO kind of girl. The thing I hate about hard tacos is it falling apart when you bite them and the insides get all on you, the table, the plate or all the above. I saw this recipe on how to create TAO BOWLS…..

They are created with corn tortillas. I was like WHAT? HOW? I followed the recipe….

Spritz each tortilla with water. I suggest doing it 3 at a time. I placed them on a plate and microwaved them for 30-45 seconds depending on the power of your microwave. This make them pliable.

tbpicI place a muffin pan upside down and spray with cooking spray. I then place the tortillas like so in above picture and bake at 350 for 8-10 minutes.

Here are MY FILLINGS. I didn’t have any black beans on hand and didn’t feel like going out to get any so I just used what I had Lettuce, Corn, Shrimp, Salsa & Sour Cream

Curry Chicken Salad

Chicken Thighs Seasoned

Soooo I was speaking to my daughter and she asked “what are you doing?” and my response was making Curry Chicken Salad. Can I tell you she made a face? LOL She said “I’d rather have my curry chicken with white rice”. LOL. Once upon a time I would of said the same thing myself. My palette loves to try new things depending on the ingredients.

So I seasoned the chicken thighs with sea salt, pepper and curry. I chopped up some parsley that I had and didn’t want it to go bad. I was going to grill them but opted out and put them in the oven on broil. I was careful not to overcook them and ruin it.

I chopped up a green apple, added fresh corn, craisins and mayo. Add how much of each you want. Taste as you go. YOU will know. This is how I make regular chicken salad and did not stray from my recipe. I thought about adding some walnuts but decided not to. Curry is spicy and can be really spicy depending on how much you add. You control the heat.
