  1. What inspired you to star blogging?                                              My daughter. It crossed my mind a time to 2 but she gave me that push that I needed. Since I already do so much I thought how in the hell can I add blogging to my laundry list. I did and I am DOING IT……
  2. Favorite make-up was the next question but I changed it to my favorite kitchen gadget?  My mini chopper. This baby saves me so much time   choper
  3. Pizza or Hamburgers?  PIZZA
  4. Dream job…… I am actually partially working my dream job. Having my own business with quite a few facets to my business keeps me busy. I am working towards my dream of having my own restaurant . Family owned
  5. If you could shadow 1 person for a day who would it be? I would love to shadow Chef G. Garvin. Love his flair, personality and drive
  6. Favorite You Tube blogger?  How To Cake It  with Yolanda Gampp
  7. BIGGEST FEAR…. Letting my family down. Disappointing my ancestors.
  8. What is your favorite product line?  CUISINART
  9. What’s your favorite quote? Why? image                                                                          I have a daughter and son along with 4 grandchildren. They are all looking at me. They are rooting for me and I can’t give up or give in.
  10. What do you want your followers to know about you?             I want my followers to know that I’m genuine. I love what I do and couldn’t imagine doing anything else. I want to be successful. Successful meaning impacting the lives of other in a positive way . That’s how I define success

Kale & Collard Greens. The HAPPY Couple

I WILL NOT apologize for my recent obsession with Kale & Collard Greens. I WON’T. LOL. Cooked I WILL NOT eat one without the other. I just can’t. It would be like separating a couple that we all know belongs together. NOW when it comes to having a salad I will eat Kale along with other leafy greens that I love. As I have been doing lately. I also became obsessed with BEETS but we will talk about that in another post.

Look how BEAUTIFUL they are together. I feel like a proud parent at a wedding reception. I sautéed onions, added kale, kosher salt and then I added collards. They simmer down and then I add an organic Vegetable Stock. Depending on how much I am cooking and how may I keep alternating between Kale & Collards and Vegetable Stock.. I do not drown them in stock but add enough to barely cover the greens. Then I SLOW GROOVE them. Slow Grooving is when you let this simmer for an hour or more on a low flame

Every Friday I make and sell lunch. I made BBQ Chicken, 4 Chese Mac&Cheese with Kale & Collard Greens. HUGE HIT…This Friday I had some Kale & Collards left over and decided to do our family recipe of Kale & Collard Wontons…THIS particular recipe was developed by my sister who is also a chef.Our family has quite a few recipes we’ve developed over the years. Can I do You A Favor?

Over the years I have been to many,many events. I create custom cakes and a lot of times I get invited to the festive occasion. Most times I go home with THIS type of giveaway. My initial reaction is excitement. I would go home and put it in a box or bag and push in the closet out of sight.

So after collecting these over the years I found myself doing a HUGE cleaning and came across a box filled with all sorts of favors from many, many parties. Sitting in the middle of the floor with a box filled with favors caused me to think. I looked at each favor and most of them served no real purpose (no offense to those who make and sell these). I had to make a decision of tossing all these favors. I felt bad for a moment but holding onto these did not make any sense.

This was years ago and since then I have collected 100’s of cookie cutters. I have learned to look at cutters and see that it can be have multiple uses.

Gone are the days of giving out those plastic party favors that most people have no use for and end up tossing them in the trash. Think about something more trendy. What’s trending NOW are edible favors. Everything from Candy to COOKIES.

Edible party favor benefits:

Makes your event more memorable

Most times the favor doesn’t make it to the recipient’s  home

It doesn’t get tossed

Edible Gifts Make Incredible Gifts.

Plantain+Shrimp+Avocado=HEAVEN

I ran across this recipe on TASTEMADE. Click on TASTEMADE to watch the video. I followed it to the letter and it was AH-maze-zing. I LOVE plantains…..L-O-V-E….I was excited to make these. I had most of the ingredients. All except for the Cilantro and the PLANTAINS…….

Cherry Tomatoes, Cilantro, Red Onion & Jalapenos

When I saw the ingredient list I was like YESSSSSSS. All these combined together will make for an amazing tasting dish….When you watch the video you will get excited as well.

So I seasoned my shrimp with salt, pepper & cumin, I cooked my shrimp let them cool and combined all the ingredients and let it chill.

My cups came out OK. 1 looks great but the other 2 look like WHOMP WHOMP WHOMP..Don’t think I am NOT going to eat them because I am. Practice makes perfect.

The end result is amazing…I am going to host an event just so I can serve these babies…..

Tuesday Taco Night

Fried Shrimp, Sour Cream Salsa, Lettuce & Wheat Tortillas

I am hating eating out more and more lately. Finding good paces to eat is hard. You have to go through a few BAD spots to get to find the GOOD one’s. Who has time or money? I just fine myself making everything I have a taste for.

Sooooooo. I made tacos….. I took sour cream added Salsa, Cilantro, Lime juice, Lime zest & Kosher Salt…..

Fried Shrimp

I seasoned the shrimp with Ground Cumin, Chili Powder & a dash of Cayenne Pepper. Tossed them in flour & corn meal and fried them up
